Recipes revolve around:  blueberries, black beans, broccoli, chocolate, oatmeal, onions, salmon, soy, spinach, sweet potatoes, tomatoes and walnuts.  The book is packed with scrumptious looking color photographs and over 200 healthy recipes.  Emphasis really seems to be at putting the fun back into eating healthy.

The book contains a concise introduction into each food and then branches out into appetizers, soups, salads/dressings, meats, fish, poultry, eggs/beans, pasta/grains, sandwiches, baked goods, vegetables/side dishes, desserts, drinks and breakfasts.  There is a wide variety to be found, and all look easy to make and very tasty.  I can’t wait to try out the “Blueberry Turtles”.  The recipe looks simple, and they should satisfy my family’s sweet tooth without being “bad” for you.
